I present to you Anaïs Castello Sauvier, dietician-nutritionist and phytotherapist for 10 years.

She is originally from Clermont-Ferrand, and moved to Annecy a year ago to follow her friend. She has been working for 6 years now with the NaturHouse brand, a pioneer in the field of basic dietetics. She starts from the principle that you have to "eat everything without depriving yourself and in reasonable quantities".

Within its brand, each follow-up is set up by a state-certified dietician nutritionist. During each consultation, the dietician immerses herself in the person, their lifestyle, their aversions, their psychological or pathological history but also their family history. At Natur House, the principle is that everyone has a different microbiota and that a food plan must be adapted according to this, specific to each person so that each person is able to maintain their ideal weight on a daily basis and in the long term. The brand also benefits from its own phytotherapy laboratory.

Aspiring to the same values, Anaïs naturally decided to set up a food rebalancing center, initially in Clermont-Ferrand and then in Annecy. Today, she has a monopoly in this field in Annecy-le-Vieux and soon in Annecy with three centers. Her goal is really for people to be aware that they are there as health professionals to help them through their follow-ups and weekly dietary advice but also through their kindness. Anaïs' yogi side always takes over. Her best accomplishment is when the people she follows leave her home having relearned how to eat healthily without frustration, taking pleasure in listening to themselves and finally having confidence in themselves.... What a wonderful job and it's not about to stop for her!

It was only natural that I asked him a few personal questions about his yoga practice, which I am sharing with you today.

How did you get to take care of yourself?

"Taking care of yourself" is a statement that seems simple, but yet very complex to implement, the awareness that you have to take care of yourself for us but also for my loved ones who wanted to see me in good health and full of energy. Paradoxically, it was by letting myself be overwhelmed by events, by my life at a thousand miles an hour that one day I realized that to be persuasive on a daily basis towards my patients, I had to first of all apply a benevolent framework towards myself. It started by doing sports such as running regularly, then by giving myself at least 15 minutes each day to meditate, to become aware of ME, of who I really am, to listen to myself to
then simply arrive at a regular yoga practice, which I grant and impose on myself daily at a rate of 30 min. "Grant and impose" an oxymoron signifying my feelings, indeed, daily I sometimes lack the enthusiasm to grant myself such moments because of everyday concerns but after my yoga stance, I become aware of the real priorities to bounce back better!

What practice for your well-being?

Waking up gently, drinking my glass of warm water with lemon, doing a yoga session facing the lake (I am lucky to have a breathtaking view of this pretty gem), then having a good breakfast, then taking my break
tea in the morning. What a beautiful day!

What is the ritual of your practice?

Coming to Annecy, following a partnership with my NaturHouse food rebalancing centers, I met Caroline, a friend who is in charge of organizing the academy and with whom I immediately shared the same ideas.
So it was quite natural that I signed up for the Satiam Academy, where I then discovered Elodie Lanterme, a yoga teacher and above all a person full of kindness! She made me fall in love with her practice, she allows me to let go for the time of a practice to bring out all my positive energy and face my week! So apart from my daily appointments between me and my mat, I practice at the academy 2 times a week or even 3 when my schedule allows me!

What do you get out of it?

A feeling of well-being, I am drained, I no longer have this permanent knot in my stomach, a break to better start my day again.

What do you carry in your yoga bag?

Nothing crazy! I'm more the type to walk around with lots of "bundles" to each of my appointments, with the great risk of forgetting something!
When I go to practice it's the opposite, I don't want to be encumbered with anything, my leeging, socks for the beginning and end of the class because my feet are always cold :-), a small bottle of water for after my practice and hop!

What is your favorite object/accessory?

A silver chain with the root chakra as a pendant.

What would be your advice for Tayrona Yoginis?

Be proud of who you are and what you accomplish every day.

Where/how do you practice?

I created a very cozy room for myself in which I can meditate and practice, otherwise I practice at the Satiam Academy and at YUJ in Paris when I have to go there.

What is your mantra/favourite phrase?

There is one that resonates particularly strongly as I write to you:

"I never lose, either I win or
I'm learning" thanks Nelson Mandela :-)!

Thank you for your trust, my second goal? To get one of your magnificent Eco-Responsible Mats for an even better practice!
